Mandarin Almond Salad -Chelsea

Dressing:
1/4 cup vegetable oil
1/8 tsp. pepper
2 Tbsp. vinegar
1/8 tsp. hot pepper sauce
1 Tbsp. fresh parsley, minced
1 Tbsp. sugar
1/2 tsp. salt

Salad:
1/2 cup slivered almonds
1 can mandarin oranges
bunch red leaf lettuce, shredded
small red onion, sliced

Melt 2 Tbsp. sugar in a small pan, stirring constantly. Add almonds, stirring until coated. Let almonds cool, then break apart. In a jar, mix dressing ingredients. Before serving, add oranges to lettuce and onion. Toss with dressing and top with almonds.
