Eggplant Casserole -Grandma

eggplant, sliced thinly
tomatoes, sliced thinly
shredded cheese
chopped bell pepper
chopped onion
salt and pepper

In a large casserole dish layer ingredients in order. Continue layering until dish is full or ingredients run out. Cover and bake at 350° until eggplant is tender. This is especially good as a leftover.
