Chicken Fajita Soup -Katy

2 chicken breasts
4 bell pepper, different colors, diced
2 onions, diced
fajita seasoning
1 (28 oz.) can diced tomatoes
chicken broth

Saute chicken, add onions, bell pepper, and fajita seasoning. Cook until veggies are roasted. Stir in the diced tomatoes (do not drain) and cover with chicken broth, or bouillon and water. Simmer 20 minutes. Serve with your choice of toppings: crushed tortilla chips (a must), cheese, sour cream, chopped cilantro, chopped avocado, and fresh lime juice. You could substitute beef stew meat for chicken.
