2 large bags frozen spinach
1 (8 oz.) package cream cheese
1 cube butter
1/2 onion, diced
1/2 tsp. minced garlic
1 cup chicken broth
lemon juice
salt and pepper
nutmeg
In a large frying pan mix cream cheese, butter, onion, and garlic until smooth. Cook until onion is tender. Add broth and lemon juice. In microwave, partially cook the spinach in its bag. Empty the spinach into a large bowl and press out fluid. Mix into the cream mixture. Add seasonings to taste. Put into a 9x13 pan and bake at 350° until bubbly. You can stir in some Monterey jack cheese if you want.... sometimes I do... and sometimes I don't!
