6 large tomatoes
1/2 cup thinly sliced onions
1/2 cup olive oil
1/4 cup red wine vinegar
1/4 tsp. ground pepper
1/4 cup minced fresh parsley
2 garlic cloves
1 tsp. salt
1 Tbsp. fresh snipped thyme, or
1 tsp. dried thyme
Chop vegetables and mix all ingredients together. Very fresh and yummy.
