Broccoli-Rice Soup -Grandma Great

1 Tbsp. olive oil
1 cup chopped onion
5 cups chicken or vegetable broth
1 cup chopped tomato, fresh or canned
1/2 cup long grain rice, uncooked
1/4 tsp. each: salt and black pepper
1/8 tsp. crushed red pepper
4 cups chopped fresh broccoli
parmesan cheese

Heat oil in saucepan over medium-low heat. Add onion; cover and cook 5 minutes or until tender. Add broth, tomato, rice, salt, and peppers, then bring to a boil. Cover, reduce heat, and simmer for 15 minutes. Add broccoli and cook about 7 minutes, or until rice and broccoli are tender. Sprinkle parmesan cheese on individual servings.
