Chicken Noodle Soup -Senia

1 lb. datilini noodles
1 large onion, chopped
3-4 carrots, chopped
1 cup peas
2 cups frozen cherry tomatoes
1 garlic clove, minced
6 bouillon cubes
3 boneless chicken thighs
1 lemon or lime
salt and pepper

Put everything (except noodles) in a large pot, fill half way up with water, partially cover for 45 minutes on low, stirring occasionally. Let simmer for 15 minutes with lid off. Once veggies are soft, remove from heat. I blend the vegetables and broth in a blender so my kids don't see the veggies, but that's optional. Cook noodles and drain half of the water, then pour the rest into the soup mixture.
