Pickled Beets -Amy


3 quarts beets, peeled and cooked
2 cups sugar
2 cups vinegar
2 cups water

Combine in a saucepan everything but the beets; bring to a boil. Pack beets into jars, saving 1/4 inch headspace. Pour hot liquid over beets, still leaving  1/4 inch headspace. Put on lids and process in water bath or steamer for 30 minutes.
