Chicken Salad -Amy

4-6 chicken breasts
1 cup chopped celery
1/2 bunch green onions, chopped or 1/2 onion, diced fine
1 cup frozen peas (thawed, rinsed, and drained)
1/2 cup chopped pecans
mayonnaise to taste
salt and pepper to taste

Boil chicken breasts until cooked through. Dice up the chicken and add in the other ingredients. Stir in enough mayonnaise (NOT miracle whip) to moisten. Put in salt and pepper to taste. Excellent served on homemade rolls or croissants.
