Our Daily Bread -Amy

1/2 cup potato flakes
2 cups hot water
1/4 cup oil
1 tsp. baking soda
3 eggs, beaten
2 Tbsp. salt
1/4 cup sugar
2 cups cottage cheese
3 Tbsp. yeast
12-14 cups flour

Pour hot water over potatoes- add sugar, salt, and oil. Warm cottage cheese, then add to cooled potatoes. Next, add baking soda, yeast, and beaten eggs. Mix in flour gradually. Let rise until double, then knead down and let rise again. Shape into loaves and let the dough rise once more in pans. Bake at 350° for 45 minutes, or until golden brown.
