I just really didn't think we had enough chicken salad recipes, so here's one more:
cooked and diced chicken breasts
red onion, diced
jalapeno, seeded an d finely diced
slivered almonds
shredded cheese
mandarin oranges, drained
salt and pepper
mayonnaise and/or salad dressing
I like to season the chicken breast with salt and pepper, then bake at 375° until cooked through. Remove from pan, cover, and let rest for 10 minutes. Dice into cubes, then toss with onion, jalapeno, almonds, cheese, oranges- they will break apart as you stir. Add salt, pepper, and mayonnaise, refrigerate, and enjoy!
