Shar's Bread -Lisa

6 cups warm water
2 Tbsp. salt
2/3 cup canola oil
2/3 cup honey
6-8 cups fresh ground flour
3 Tbsp. dough enhancer
2 cups high gluten bread flour (or 1/3 cup wheat gluten)
3 Tbsp. yeast

Place in Bosch with dough hook, use the momentary switch (m) to mix well. Turn the machine to speed 1 and continue to add wheat flour until the dough begins to pull away from the sides of the bowl. The dough will be sticky at this point- do not add too much flour. Knead on speed 1 for 8-10 minutes. Add a little water or flour, as needed, if dough is too sticky or too dry.

Oil your hands, remove dough from mixer onto a slightly oiled counter, and divide into 4 or 5 loaves (depending on pan size). Shape loaves and place in a well greased or sprayed pan. Cover with a dry towel and let rise until double.

Bake in a preheated 350° oven for 30-35 minutes, or until the inside temperature is 200°. Cool on racks before putting into bread bags.
